Paleo Banana Muffins

My mother shared this recipe with me. Today I had a chance to make it. After it was done baking and had cooled down, I had this delicious snack with decaffeinated tea and some slices of apple.

This is a great recipe for a healthy snack. It is gluten, dairy free and is full of fiber! Let’s take a look at the recipe. Have fun!

Ingredients:

Combine in first bowl, mix and set aside:

3 ripe bananas (medium/large)

1/3 cup melted coconut oil

1/3 cup honey

1 teaspoon vanilla

Combine in second bowl, mix and set aside:

3 eggs

1 Tablespoon apple cider vinegar

Combine in third bowl, mix and set aside:

3 cups almond meal flower

1 teaspoon cinnamon

1/2 teaspoon sea salt

1/2 teaspoon nutmeg

3/4 teaspoon baking soda

Mix all of the above ingredients together. You can add nuts, raisins, and raw unsweetened coconut flakes to the batter. I put in about 1/2 cup of coconut flakes, 1/2 cup of unsalted raw sunflower seeds and 1/2 cup of unsalted raw pumpkin seed.

Bake at 325 degrees. Use a tablespoon to scoop and place on cookie sheet layered with parchment paper or you can fill muffin cup liners.

You can exchange the honey for coconut sugar as I did. Some people have food intolerances. Some food intolerance examples would be cane sugar and honey. This provides an opportunity to experiment with different ingredients.

Adding salt may not be an option for some people. I would remove it if this is the case. There is no harm in experimenting with your recipe! You could use a natural sweeter if you have diabetes.

If at all possible go with the least processed ingredients.
